This coffee is from the highlands of Chiapas, Mexico, which borders the Pacific Ocean to the south and Guatemala to the east. It is strictly high grown (we use the acronym SHG in the coffee trade) and as a result is sweeter and generally scored higher in cuppings than its high grown (HG) cousin from the same region. It contains caramel, rich milk chocolate and cherry flavors, medium acidity and it has a heavy body. It is best at a light to medium roast, so that's how we roast it.
